Dish Name: Creamy Polenta Yield: 4-6 people Amount: Ingredients/Details: 1 Cup Corn Meal 5 Cups Chicken Stock 4oz Cheddar Cheese, Shredded 2oz Swiss Cheese, Shredded 1oz Parmesan Cheese, Shredded 2oz Green Onion, sliced Method of Preparation: Make sure all ingredients are ready before you start cooking. • Bring your Chicken Stock to a boil, whisk in your cornmeal. • Let cook on medium heat for 5 minutes. • Turn heat off and add all Cheese, mix well. • Once incorporated, add thin sliced green onion. Dish Name: Hard Cider Brined Chicken Yield: 1 Quart (Brine), Feeds 4 Amount: Ingredients/Details: 1 each Whole Chicken, Skin on, bones in. 1Tbsp Black Peppercorns 2 Sprigs Fresh Thyme 2 Sprigs Fresh Rosemary 2 Leaves Fresh Sage 3 each Bay Leaves 4 each Garlic Cloves, chopped 2-12oz Bottles Hard Cider 1 Cup Water ½ Cup Maple Syrup ½ Cup Kosher Salt Method of Preparation: • Heat all ingredients in a pot until the salt has dissolved. Let cool properly. • Cut chicken in half, having one breast and one thigh on each half • Once cooled, place Chicken in Brine and let sit for 3-4 hours. • Cook chicken properly, serve.
